CACAO, PEAR, FENNEL AND CASHEW SMOOTHIE

Who LOVES cleaning their blender? Oh yeah – NO ONE. This is probably a large part of the reason why it took me so long to get into the smoothie craze. That was, until this Raw Cacao Fennel Smoothie came into my life. It tastes amazing, injects you with all the good stuff, makes your eyes sparkle, your hair shine like a my little pony in a Pantenne advert and you can carry it around in your handbag in a cute kitchy jar ready for your mid-morning tummy grumble (not something I´ve never actually done but nice idea right?!)

I’ve caved thanks to all of these amazing healthy brownie points and have started to make the extra effort to whizz one up every couple of days and I have to admit it is totally worth every single blender-washing-up-marathon.

So say goodbye to that extra 20mins of staring out of your window every morning… the smoothie is about to dominate your mornings now I’m afraid.

I recently got my hands on the Honestly Healthy cookbook – Honestly Healthy Cleanse – and this recipe was inspired from a smoothie recipe I found there. Fennel, pear and cacao are a threesome match made in food heaven – who would have thought it?! I’ve added a little extra to it as I have a bottomless stomach and post-spinning need a little extra protein.

– MAKES ONE MASSIVE SMOOTHIE –

1/2 a medium bulb of fennel, chopped up small

1 juicy pear, cored and chopped up

a handful of cashews, soaked overnight

1 teaspoon of baobab powder

heaped desert spoon of raw cacao powder

1/2 teaspoon of cinnamon

1 teaspoon of chia seeds

1 teaspoon of milled flax

1/2 cup of almond milk or coconut water depending whether you’d like it creamy or not

Throw is all in the blend and whizz up for a couple of minutes. Put in a pretty jar with a funky straw and swoon at it for a bit before sipping (or downing in one, as I can never stop myself from doing!)
