COURGETTI WITH AVOCADO PESTO

On our Good Yoga Life Ibiza retreats this was my favourite dish to serve up to our hungry yogis because it looks so pretty and is the best ever healthy, happy sunshine food. Spiralized courgette smothered in natures gold: avocado. There are so many ways to dress your courgetti, but I promise this is super tasty and so fast. Plus if you make it in the morning it lasts so well (and actually gets even better) by the evening.

WARNING: Courgetti is just courgette spiralized into spaghetti. Most of us know this by now, but if (like my Dad) you didn’t know this and you’re hoping to find a recipe for a carby-gluten-filled-pasta-party then you’re going to be disappointed!

Ingredients

Instructions
  1. Spiralize the courgette
  2. Whizz all of the rest of the ingredients together in a blender until thick and creamy and as smooth as it will go.
  3. If it seems a bit too thick then add a little extra olive oil or some cold water
  4. Mix the courgetti and pesto together (go on,get your hands in there!)
  5. Pile up on a platter, decorate with radishes and tomatoes and Enjoy 🙂
