SWEET POTATO BUCKWHEAT GRANOLA

Yep, that’s right SWEET POTATO in granola. Mental.

I don’t know why I even bother making granola anymore – it lasts about 28 minutes in our house. Mainly my fault as I end up snacking on it continuously. It’s so freakin delicious. And as this is made with buckwheat and sweet potato it’s even better for your than regular sugar-free, gluten-free, plant-based granola.

Vegetables for breakfast?! What a revelation! Your 5 a day has never been so indulgent. Sometimes I sprinkle this deliciousness on top of porridge – breakfast on top of breakfast –  is that even allowed?! I’m going to say YES. Here’s the recipe….

Instructions
  1. First bake your sweet potato until its all soft and squishy, then when totally cooled mash up with the syrup. If it's a bit dry then add a little melted coconut oil or water.
  2. Mix the sticky ingredients with the dry ingredients until completely combined and little clumps and clusters have formed.
  3. Bake at 180c for 20 minutes, then give it a little mix and shake around and then continue to cook until all golden and yummy smelling.
  4. Once cooked remove from the oven and allow to cool - this is when it goes crunchy! Add the extras afterwards and enjoy by the heapful with lots of fresh fruit and nut milk.
