So I write this from Buenos Aires where I am living out the final month of my Latin American adventures in a studio apartment with my increasingly bearded boyfriend. Apart from being cheap as ‘papas fritas’ and being able to keep an eye on your dinner cooking whilst having a shower, there aren’t really so many advantages to living in one room.
However, as I rolled out my mat this morning for a slightly cramped yoga practice, I breathed in deep the smell of the dustbin next to my head and remembered that these are easy sacrifices to make for the incredible adventure of travelling. As the year comes to end I am whole heartedly grateful for every twist and turn of this mental adventure and I happily accept that to experience the soaring highs of climbing the Andes and whale watching in Ecuador, you must accept the lows of the drippy air-conditioner (currently raining down my back) and the cockroaches which seem to enjoy saying goodnight to us every bedtime.
The one sacrifice which is truly challenging to overcome however, is how sorely I miss my beautiful blended and mighty juicer. The most sophisticated appliance in our current accommodation is a 25 year old microwave, which only gets used on auto-mode as I can’t figure out any of the other foreign buttons. If I was to make one magical end of year wish, it would be to have my blender here with me just for 48 hours, so I could whip up this – the king of all smoothie‘s packed with so much green goodness and perfect for a much needed New Year’s Day health kick. A mish-mash of many other smoothies which I discovered from the wonderful health blogging community over the past couple of years, I feel like I’ve found a winner here – cucumber to cool you inside and out after a night of sweaty New Years partying, spinach to soothe your tummy and avocado to give your skin it’s sparkle back. Of course you can always tweak away with the ingredients so you can find your perfect green smoothie match made in heaven for 2016.
– SERVES ONE WITH ACHEY DANCING FEET AND A VERY MUZZY HEAD –
HERE’S ALL YOU NEED
A massive handful of spinach
1/2 a medium sized cucumber, skin n all
1/2 an avocado
1 desert spoon of maca powder
1 desert spoon of chia seeds
1 teaspoon of bee pollen
Juice of 1 apple (or if you can’t be bothered to juice or want a thicker smoothie, just through the whole 1/2 apple in)
Squeeze of 1/2 a lime
1/2 cup of sugar free almond milk
If you’re really feeling sorry for yourself and want to go even sweeter and creamier then chuck in 1/2 a banana too.
STICK IT ALL IN YOUR BLENDER
Get in bed and watch some classic Friends asap. New Years Day done the right way!
